Homemade Granola

From Each Day....
All measurements are approximate. If you don't like a certain ingrediant, don't add it.
In a large bowl mix together:
6 cups of Old Fashioned Oats.
1 cup of sunflower seeds (out of the shell)
3/4 of a cup almonds  (slivered or sliced, just not whole)
3/4 of a cup chopped pecans
Add any nuts you like or have on hand. I have also added ground flax seed and wheat germ. Just be careful not to add too much.

Spread onto a sheet pan and toast for 30minutes at 325 degrees stirring occasionally to toast the oats.

From Each Day....

In a small sauce pan melt:
1 stick of butter

Once that is melted add:
2 tsp of vanilla
1 tsp of cinnamon
1 cup of honey
3/4 cup of brown sugar
Stir until mixed well and smooth. Does not take long and be careful it will burn.

Remove the oats and nuts from the oven and return to large bowl add coconut:
14oz bag of sweetened coconut



Pour honey mixture over the oats and stir well. I use my hands to get the oats well covered.
Return oats to the cookie sheets, split between two sheets for quicker toasting. Place in oven for 10 minutes making sure the edges don't burn.

Remove from oven and let cool. This is the important part. If the mixture is not cool and you add the craisins, dates and raisins they will get hard.
From Each Day....
Once cooled stir in:
3/4 cup of craisins
1 cup raisins
8oz box of chopped dates

Place in an airtight container. This should keep for about 1 month.
Wonderful on yogurt!

  3. Wow that sounds like a LOT Of WORK! lol It does sound yummy and YES it does last a long long time, I keep a bag in my cubby at work to put over my yogurt. Yours is much yummier I am sure!
