Oooey Gooey Coffee Cookie

 These are probably the best ooey, gooey, rich cookies you will ever eat. 

My daughter started making these about a year ago and we have been enjoying them ever since.

The original recipe is from Southern Living but we have made some changes to it. One of the changes is removing the nuts so that Sam can eat them.

Ooey Gooey Coffee Cookie
 

3/4    cup butter or margarine
2       tablespoons instant coffee granules
2       cups plus 2 tablespoons all purpose flour
1/2    teaspoon baking soda
1/2    teaspoon salt
1/2    cup sugar
1        large egg
1        egg yolk
3/4     cup butterscotch chips
3/4     cup chocolate chips 


Preheat oven to 325 degrees.


Combine butter and coffee granules in a small saucepan. Cook over medium-low heat until butter melts and coffee dissolves. Let cool but don't let butter resolidify.

Combine flour, baking soda, and salt. Set aside.

Combine butter mixture, sugars, egg, and yolk in a large bowl. Beat with mixer until well blended.

Gradually add flour mixture, mixing at low speed.

Add chocolate and butterscotch chips.


Bake at 325 degrees for 12-14 minutes. Let cookies cool slightly on a baking sheet before removing...they are kinda gooey.

  1. I might just make these tomorrow, don't have butterscotch chips though, so will add some pecans!
